  • 175 gsweet potato(peeled and coarsely grated)
  • 25 gonion(finely diced)
  • ½egg(medium, for the mixture)
  • 2egg(medium, for frying)
  • 150 glow-fat quark
  • 5 gchives(finely sliced)
  • 2 ½ gparsley(finely chopped)
  • 7 ½ golive oil
  • ½ tspblack pepper(freshly ground)

Instructions

    Coarsely grate the 175 g sweet potato, tip it into a clean tea towel and wring it out firmly. The drier the shreds, the crispier the rösti.

    Mix the grated sweet potato with the 25 g onion and ½ egg in a bowl, then season with salt and half of the ½ tsp black pepper.

    Stir the 150 g low-fat quark together with the 5 g chives, 2 ½ g parsley, a pinch of salt and two tablespoons of water until smooth and creamy. Chill until needed.

    Heat two thirds of the 7 ½ g olive oil in a non-stick pan. Shape the mixture into four flat patties, place them in the pan and press them down gently with a spatula.

    Fry over medium heat for 6 minutes until the underside is golden, then flip and cook for another 5 minutes. Do not move them too early or the rösti will fall apart.

    Transfer the rösti to two plates. Add the remaining oil to the pan and fry the 2 egg over medium heat until the whites are set and the yolks still runny.

    Slide two fried eggs onto each portion of rösti, grind over the remaining ½ tsp black pepper and serve the herb quark alongside.

Tips

The most important step comes right at the start: wring the grated sweet potato out properly. Sweet potato holds far more water than a floury potato, and every gram of it works against the crust in the pan. If you would rather skip the tea towel, salt the shreds and leave them for ten minutes, and some of the water will drain off on its own. The protein comes from two directions here. Five eggs deliver around 35 g of high quality protein with an excellent amino acid profile, and the quark adds another 36 g while bringing calcium along with it. Together the serving lands at roughly 38 g, which is a solid number for breakfast and comfortably carries you through to lunch. Meal prep works well. Fry the rösti the day before and store them in the fridge once cooled. In the morning they go into a 200 degree oven for six minutes or a dry pan for three, and the crust comes straight back. The microwave turns them soft, so that is the one method worth skipping. Always fry the eggs fresh. A spoonful of sriracha on the side or a few drops of lemon juice stirred into the quark takes the edge off the sweetness of the potato and rounds the plate out nicely.

Frequently asked

Why do my sweet potato rösti never turn crispy?

It is almost always too much water left in the shreds. Sweet potato releases a lot of liquid as it fries, and that liquid steams instead of browning. Wring it out firmly and resist flipping the rösti too early, and the crust will come.

Can I bake the rösti instead of frying them?

Yes. Bake at 220 degrees fan on baking paper for about 25 minutes, turning them halfway through. They cook more evenly that way but come out a little less crisp than in the pan.

How do I make this recipe vegan?

Swap the quark for a soy based version and bind the mixture with two tablespoons of chickpea flour mixed with three tablespoons of water. Fried smoked tofu works in place of the eggs, which leaves you at around 30 g of protein per serving.
