Sheet-pan salmon with sweet potato and broccoli
A sheet-pan dinner with salmon, sweet potato wedges and broccoli — 38 g protein, plenty of omega-3, one tray, 35 minutes.
Ingredients
- 140 gsalmon fillet(2 fillets)
- 200 gsweet potato(in wedges)
- 125 gbroccoli(in florets)
- 10 mlolive oil
- ½lemon
- ½ sprigrosemary
- 1 clovesgarlic(sliced)

Preheat oven to 200 °C / 400 °F fan.

Toss 200 g sweet potato with 10 ml of 10 ml olive oil, salt, pepper and ½ sprig rosemary, roast on a tray for 12 minutes.

Toss 125 g broccoli with 5 ml oil and add to the tray. Season 140 g salmon fillet with salt, pepper, sliced 1 cloves garlic and juice of ½ lemon, place on the tray too.

Bake another 12 minutes until salmon is just opaque and sweet potatoes are golden.

Drizzle with the remaining 10 ml olive oil and serve with lemon wedges.

How do I know the salmon is done?
It flakes easily at the thickest spot and is just barely translucent in the middle — internal temperature of 50–52 °C / 122–125 °F.
