Ground beef bowl with sweet potato and broccoli
A filling bowl with seasoned ground beef, roasted sweet potato, broccoli and a yoghurt topping — 46 g protein and 9 g fibre.
Ingredients
- 150 gground beef(5% fat)
- 200 gsweet potato(cubed)
- 125 gbroccoli(in florets)
- 40 gGreek yoghurt
- 7 ½ mlolive oil
- ½ tspsmoked paprika
- ½ tspcumin
- 1 clovesgarlic
- ½onion(finely diced)
Instructions

Preheat oven to 200 °C / 400 °F fan. Toss 200 g sweet potato with 10 ml 7 ½ ml olive oil, {{paprikapulver-geraeuchert}}, salt and pepper, roast on a tray for 22 minutes until golden.

Steam 125 g broccoli for 5 minutes or roast alongside the sweet potato for the last 12 minutes.

Heat the remaining 7 ½ ml olive oil in a pan, sweat ½ onion and 1 cloves garlic for 2 minutes.

Add 150 g ground beef, break it up and brown, season with ½ tsp cumin, salt and pepper.

Divide beef, sweet potato and broccoli between two bowls, top with a dollop of 40 g Greek yoghurt.
