Frozen Skyr Bark with Berries and Almonds
Creamy skyr bark with berries and crunchy almonds, set firm in the freezer. A refreshing snack with 16 g protein per serving, ready to prep in 10 minutes.
Ingredients
- 125 gSkyr
- 7 ½ ghoney(or maple syrup)
- ¼ tspvanilla extract
- 38 gberries (fresh)(e.g. blueberries, raspberries and strawberries, larger berries halved)
- 7 ½ galmonds(roughly chopped)

Line a baking sheet or a flat tray with parchment paper so the bark lifts off cleanly later.

Stir the 125 g Skyr together with the 7 ½ g honey and ¼ tsp vanilla extract in a bowl until smooth, creamy and even.

Spread the skyr mixture about one centimetre thick across the parchment with a spatula.

Scatter the 38 g berries (fresh) and 7 ½ g almonds evenly over the top and press them in gently so they hold once frozen.

Place the tray in the freezer for at least four hours, ideally overnight, until the bark is completely solid.

Break the frozen bark into uneven pieces and serve straight away. Keep any leftovers airtight in the freezer.

How long does the bark keep in the freezer?
In an airtight container or bag it stays firm and creamy for about three weeks. Place parchment between the pieces so they do not stick together.
Can I use low-fat quark instead of skyr?
Yes, low-fat quark works just as well. Skyr is a touch firmer and gives slightly more protein, but both make a nicely creamy bark.
Doesn't the bark melt right away?
It softens after a few minutes, which is intended and makes it creamy. Only take out as much as you eat straight away.
