Egg curry with spinach and basmati rice
Hard-boiled eggs in a creamy tomato and coconut sauce with spinach, served over basmati rice. 30 g protein per serving and a warming vegetarian main in just over 30 minutes.
Ingredients

- 75 gbasmati rice(weighed uncooked)
- ½onion(finely diced)
- 1 clovesgarlic
- 7 ½ gginger(fresh, grated)
- ½ tbspcoconut oil
- ½ tspturmeric
- ½ tspcumin(ground)
- ½ tspsweet paprika
- ¼ tspchilli flakes
- 200 gtomato passata
- 50 mlcoconut milk
- 50 gspinach(fresh or thawed)
- 5 gcoriander(fresh, roughly chopped)
Instructions

Cook the 75 g basmati rice in salted water according to the packet and keep warm.

Hard-boil the 3 egg for 8 minutes, cool under cold water, peel and halve.

Heat the ½ tbsp coconut oil in a wide pan and soften the ½ onion over medium heat for 5 minutes. Add the 1 cloves garlic and 7 ½ g ginger and fry for 1 minute.

Stir in the ½ tsp turmeric, ½ tsp cumin, ½ tsp sweet paprika and ¼ tsp chilli flakes and toast for 30 seconds until fragrant.

Pour in the 200 g tomato passata and 50 ml coconut milk, bring to a boil and simmer uncovered for 10 minutes until the sauce turns creamy.

Stir in the 50 g spinach and let it wilt. Season generously with salt and pepper.

Nestle the egg halves into the sauce and warm through briefly.

Serve the curry over the 75 g basmati rice and scatter with 5 g coriander.

Can I make the curry ahead?
Yes. The sauce keeps for 3 days in the fridge and freezes well. Boil the eggs fresh and add them only when reheating, so the yolks stay tender rather than crumbly.
How do I make it even higher in protein?
Simmer a handful of red lentils with the passata, or fold in fried tofu cubes. Either one lifts the protein noticeably and makes the sauce silkier.
Does brown rice work too?
Yes, wholegrain or brown basmati rice works well and adds more fibre. Allow around 15 minutes extra cooking time.
