  • ½cucumber(about 300 g, quartered)
  • 2egg
  • 50 gSkyr
  • ½ tspmedium-hot mustard
  • 5 gchives(finely sliced)
  • ½ pinchsweet paprika

Instructions

    Place the 2 egg in a pot of cold water, bring to a boil and hard-cook for 9 minutes from the moment it bubbles. Plunge straight into ice water afterwards so the shells slip off easily.

    Quarter the ½ cucumber lengthways and scrape out the soft seeds with a teaspoon so you get little boats. Pat the grooves dry with kitchen paper.

    Roughly dice the peeled eggs and fold them in a bowl with the 50 g Skyr and ½ tsp medium-hot mustard. Do not mash too finely, a few chunks give the salad some bite.

    Fold in half of the 5 g chives and season generously with salt and pepper.

    Spoon the egg salad into the cucumber boats, scatter with the remaining 5 g chives and a pinch of ½ pinch sweet paprika. Best served fresh.
