Crispy Roasted Edamame with Sesame and Paprika
Oven-roasted edamame, seasoned with soy sauce, smoked paprika and sesame. A crunchy vegan snack with 13 g of plant protein per serving, ready in 30 minutes.
Ingredients
- 100 gedamame (frozen)(shelled, frozen)
- 3 ¾ golive oil
- 3 ¾ gsoy sauce(about 1 tbsp)
- ¼ tspsmoked paprika
- 2 ½ gsesame seeds

Preheat the oven to 200 °C fan. Let the 100 g edamame (frozen) thaw, or briefly soften them in hot water, then drain in a sieve.

Spread the edamame on a kitchen towel and pat them thoroughly dry. The drier the beans, the crispier they turn in the oven.

Toss the edamame in a bowl with the 3 ¾ g olive oil until evenly coated. The soy sauce and spices go on only after roasting.

Spread the edamame in a single layer on a baking tray. Roast for 20 to 25 minutes, shaking the tray once halfway through, until golden and crisp.

Stir together the 3 ¾ g soy sauce and ¼ tsp smoked paprika. Toss the hot edamame straight from the oven in the mixture and scatter the 2 ½ g sesame seeds on top.

Let them cool briefly. The edamame crisp up further as they cool and taste best while still warm.

Why won't my edamame turn crispy?
Usually leftover moisture. Pat the thawed beans thoroughly dry before roasting and spread them out in a single layer with space on the tray, otherwise they steam instead of roast.
Can I use edamame in the pod?
For this snack you need shelled edamame, meaning the beans on their own without the pod. Edamame in the pod won't crisp up in the oven and are usually steamed and eaten straight from the shell.
How long do roasted edamame keep?
They are crispiest straight from the oven. In an open jar at room temperature they stay crunchy for about a day. After that, roast them briefly again in the oven to crisp them back up.
