Chicken with mushrooms in mustard cream sauce
A creamy one-pan dish with chicken medallions and mushrooms in a mustard-cream-cheese sauce — 48 g protein with just 8 g carbs.
Ingredients
- 160 gchicken breast
- 125 gmushrooms(sliced)
- 50 gcream cheese
- 7 ½ gmedium-hot mustard
- 50 mlvegetable stock
- ½onion(finely diced)
- ½ clovegarlic
- 5 mlolive oil
- 5 gparsley
Instructions

Cut 160 g chicken breast into thick medallions, season with salt and pepper.

Heat 5 ml olive oil in a pan, sear the chicken for 3 minutes per side until golden, remove.

Sweat ½ onion and ½ clove garlic in the same pan for 2 minutes, add 125 g mushrooms and sauté hard for 5 minutes.

Deglaze with 50 ml vegetable stock, stir in 50 g cream cheese and 7 ½ g medium-hot mustard, bring to a brief boil.

Return chicken to the sauce and let it sit for 2 minutes. Serve sprinkled with 5 g parsley.
