Chia pudding with coconut and berry compote
Creamy vegan chia pudding with coconut milk and warm berry compote — 11 g fibre and omega-3 with 5 minutes of prep.
Ingredients
- 25 gchia seeds
- 100 mlcoconut milk
- 100 mlplant-based milk
- 7 ½ gmaple syrup
- ½ tspvanilla extract
- 100 gberries (frozen)
- 7 ½ gcoconut chips

Whisk 25 g chia seeds, 100 ml coconut milk, 100 ml plant-based milk, ½ tsp vanilla extract and half of the 7 ½ g maple syrup in a bowl.

Stir again after 5 minutes to prevent clumping. Refrigerate overnight (at least 4 hours).

Simmer 100 g berries (frozen) with the remaining maple syrup in a small pot for 4 minutes to make a chunky compote, cool.

Divide pudding between two glasses, top with the berry compote and 7 ½ g coconut chips.
